Your favorite breakfast cereal does not only stop at granola cups but extends to include healthy raspberry smoothie. These raspberry smoothie granola cups double as breakfast and fun, delicious, and equally healthy snacks for indulging throughout the day.

Breakfast ideas have become increasingly interestingly different these days. And although rather new, these granola cups have become increasingly popular. Mostly served with yogurt and topped with fruit of choice a little flavor switch-up is always a good idea.

Recipe Run-Through

Make the granola cups. In a bowl, mix peanut butter, honey, chia seeds, vanilla extract, and rolled oats until combined. Thoroughly grease a cupcake baking pan with butter then spoon the granola mixture into each cupcake cup. Gently press a measuring spoon into each cup to form a bowl-ish shape. Bake in a preheated oven until browned around the edges.

Make the smoothie. Into a blender add bananas, greek yogurt, and raspberries. Blend until smooth and thick.

Remove granola cups from the baking tin and fill them with the raspberry smoothie.

Ingredients

  • 200gm rolled oats

  • 150 ml honey

  • 80 gm shredded coconut

  • 60 gms peanut butter

  • 1 tbsp chia seeds

  • 1/2 tsp vanilla

  • 1 tbsp cinnamon powder

  • 80 gm shredded coconut

  • Raspberry Smoothie
  • 2 medium-sized bananas

  • 200 ml Greek yogurt

  • 2-3tbs honey

Directions

  • Preheat the oven to 170C then generously grease a cupcake baking tin with butter. Set it aside.
  • In a small bowl mix rolled oats, peanut butter, honey, vanilla extract, cinnamon powder, shredded coconut, chia seeds, and a pinch of salt until combined.
  • Spoon the oatmeal mixture into the prepared baking tin.
  • Bake for 20 minutes; until browned around the edges. When ready, remove it from the oven and immediately press the measuring spoon ( again) in the centre of each granola cup. Set them aside to cool for atleast 25 minutes before you remove them from the baking tin.
  • Using a spoon, or small knife run it around the edges of each cup then gently pull the oatmeal cups to release from the baking tin.
  • To make the smoothie; combine bananas, raspberries, plain Greek yogurt, and honey in a blender. Blend on medium speed until thick.
  • Fill each oatmeal cup with a raspberry smoothie then serve.
