  • Preheat your oven to 200C. Line a muffin or cupcake baking tray with paper liners. Note that this recipe will yield 6 Jumbo muffins when baked with a muffin pan and 12 muffins when baked with a cupcake pan.

  • Combine the wet ingredients (mashed bananas, vegetable oil, brown sugar, vanilla, and eggs) until well blended. In a separate bowl, mix together the flour, cinnamon, and baking powder until combined.

  • Combine the wet ingredients with the dry ingredients. Pour muffin batter into muffin pan filling only up to 3/4 full. Bake until browned along the edges and until a skewer comes out mostly clean. (Because of the chocolate chips few streaks of chococlate will adhere to the skewer which is fine)

  • Preheat your oven to 200C. Line your muffin pan with paper paper liners and set it aside for later use.
  • In a medium-sized bowl, sift all-purpose flour. Then add baking powder and cinnamon, and mix everything thoroughly. Set this bowl aside for later use in your recipe.
  • In another bowl, combine vegetable oil, sugar, vanilla extract, mashed bananas, and eggs. Use a hand whisk to beat the mixture until it becomes frothy and slightly thickened. This will help incorporate air and blend the ingredients for your muffin batter.
  • In three batches, mixing at every turn add the flour mixture to the wet ingredients. Mix until combined.
    Add the chocolate chips and mix until equally distributed throughout the butter.
  • Pour the muffin batter into the muffin pan, filling each cup about 3/4 full. Bake in a preheated oven at 200°C (390°F) for the first 10 minutes, then reduce the temperature to 180°C (340°F) and bake for an additional 10-15 minutes until golden brown and a toothpick inserted into the centre comes out clean.

    For cupcake baking pans, follow the same procedure but adjust the baking time to 8 minutes at 200°C (390°F) and 15 minutes at 180°C (340°F).
