  2. Sugar amount. This cake has a layer of caramel, and unmashed bananas, and still has sugar in the cake batter. Adding more bananas to the cake batter without weighing out the other variables can make it just too sweet and unpalatable.

How To Make Upside-Down Banana Cake Step By Step

Cut the bananas and make the caramel syrup

Grease your baking pan with butter. Then, cut ripe bananas longitudinally in half. Closely layer the bananas on the prepared pan.

Make the caramel syrup; in a small pan add brown sugar and a bit of water. On low heat let the mixture cook until the sugar completely melts and is not grainy.

Add in room temperature butter and stir until it completely melts. Remove from heat then immediately stir in vanilla paste or extract; pour over the layered bananas in the baking pan. Set aside and make the cake.

Mix the cake batter

Preheat the oven to 180C.

In a mixing bowl, add room-temperature butter, granulated sugar and vanilla extract. Mix on medium speed for five minutes until light and fluffy. Add the eggs then mix thoroughly to combine.

Next, sift the flour over the egg mixture and add baking powder, cinnamon powder, and toasted nuts. Pour in the milk and gently mix everything using a spatula until well combined.

Pour the cake batter into the baking pan that is layered with the banana mixture. Bake in the preheated oven for up to 45 minutes or until a toothpick inserted comes out mostly clean, Start checking from the 35th-minute mark.

Ingredients

  • 250 gms all-purpose flour

  • 150 gm butter

  • 120 gm granulated sugar

  • 230 ml whole milk

  • 3 medium-sized eggs

  • 100 gm roasted almonds( or any nut of choice )

  • 2 tsp cinnamon powder

  • 1 tsp vanilla paste

  • 2 tsp baking powder

  • 5 ripe bananas

  • 1/4 tsp salt

  • Caramel base
  • 120 gm brown sugar

  • 1 tsp vanilla extract

  • 100 gm butter

  • 1/4 cup water

Directions

  • Generously grease the baking dish with butter.
  • In a small pan set over medium heat add brown sugar and water. Stirring frequently let it cook slowly until the sugar completely melts ( about 5 minutes ).
    Add butter and stir continuously, let the caramel come to a slow boil for about one minute then remove from heat and stir in the vanilla paste.
  • Immediately pour the caramel over the bananas. Then, set the pan aside to make the cake.
  • In a separate bowl, combine the sugar, butter, and vanilla. Cream the mixture until it becomes light and fluffy: about 5 minutes on medium speed. Gradually add the eggs one at a time, mixing well after each addition until fully incorporated.
  • After preparing the egg mixture, sift the flour over it. Then, add in the cinnamon, baking powder, salt, and toasted nuts. Add in the milk and mix everything until well combined.
  • Pour the cake batter into the baking pan layered with the bananas.
  • Bake in a preheated oven at 180C for 45 minutes or until a skewer comes out clean. Start checking from the 35th-minute mark.
  • Remove from the oven when ready. Set it aside to cool a little ( for about 5 minutes) then overturn it on a tray. serve and enjoy.
