Whisk eggs with salt and pepper. Heat a pan over medium heat with a little oil. Pour the eggs into the pan and cook for about a minute, stirring frequently, until done.

Prepare avocado guacamole by combining mashed avocado with cilantro, chopped onions, lemon juice, and a pinch of oil.

Ingredients

  • 2 sheets puff pastry

  • 1 avocado

  • 8 large eggs

  • 2 handfuls of chopped red cabbage

  • 1 small onion

  • handful cilantro

  • 1 lemon

  • 1 tsp olive oil

  • salt to taste

  • 1/4 tsp black pepper

Directions

  • Cut the pastry sheets into equal-sized squares or desired shapes. Place them on a tray lined with parchment paper. Brush the pastry with beaten egg and sprinkle sesame seeds over the top. This will add a beautiful finish and texture to your pastries.
  • Bake the prepared pastry squares in a preheated oven at 170°C for about 20 minutes or until they turn golden brown. Once baked, remove them from the oven and set them aside to cool before assembling your sandwiches
  • To create the avocado base, combine mashed avocado with chopped cilantro, chopped onion, lemon juice from one lemon, salt, and a drizzle of olive oil. Mix thoroughly until the avocado mixture is thick and well blended.
  • To make scrambled eggs, beat eggs with salt and pepper. Cook them in a hot pan with a sprinkle of oil, stirring continuously for about 1 minute, until they are just cooked. Remove the scrambled eggs from the pan and set them aside.
  • To assemble, start by cutting each pastry square in half horizontally. Spread a generous layer of avocado mixture onto the bottom halves of the pastries, followed by a portion of fluffy scrambled eggs.

    Top the eggs with a sprinkle of chopped red cabbage for added crunch and colour. Finally, gently place the top halves of the pastries over the fillings.
