240 gm flour
100ml vegetable oil
120 gm granulated sugar
100 ml yoghurt
3 eggs
zest of two oranges
100 ml orange juice
2tsp baking powder
1/4 tsp baking soda
- Orange base
4-5 oranges
50 gms sugar
4-5 pieces of cardamom
Directions
- Preheat oven to 170C. Layer the baking pan with parchment or thoroughly grease with butter. Set aside.
- Cut oranges into thin slices, remove seeds if present.
- Add water sugar, cardamom, and sliced oranges in a pan set over medium heat. Let cook to a simmer for at least 10-15 minutes. Afterwards, set it aside to cool completely.
- Closely place cooked orange slices at the base of the cooking pan.
- In a mixing bowl, mix eggs, yoghurt, sugar, zest of oranges, orange juice and oil mix until combined.
- Add in flour, baking powder and baking soda. Mix with a spatula just to combine. Then pour the cake batter into the baking pan layered with the orange slices.
- Bake in the preheated oven at 170C for 35 minutes or until a skewer or toothpick inserted comes out clean.
- Set the cake aside to cool then turn before serving.
