I mostly use an aluminium-coated baking pan for upside-down cakes since there is minimal risk of sticking when unmoulding but you can use any you have on hand just make sure to completely grease with butter or layer with parchment paper.

Bake, cool, then turn. Bake the cake in a preheated oven until a skewer or toothpick inserted comes out clean. Set it aside to cool completely, then turn it.

Ingredients

  • 240 gm flour

  • 100ml vegetable oil

  • 120 gm granulated sugar

  • 100 ml yoghurt

  • 3 eggs

  • zest of two oranges

  • 100 ml orange juice

  • 2tsp baking powder

  • 1/4 tsp baking soda

  • Orange base
  • 4-5 oranges

  • 50 gms sugar

  • 4-5 pieces of cardamom

Directions

  • Preheat oven to 170C. Layer the baking pan with parchment or thoroughly grease with butter. Set aside.
  • Cut oranges into thin slices, remove seeds if present.
  • Add water sugar, cardamom, and sliced oranges in a pan set over medium heat. Let cook to a simmer for at least 10-15 minutes. Afterwards, set it aside to cool completely.
  • Closely place cooked orange slices at the base of the cooking pan.
  • In a mixing bowl, mix eggs, yoghurt, sugar, zest of oranges, orange juice and oil mix until combined.
  • Add in flour, baking powder and baking soda. Mix with a spatula just to combine. Then pour the cake batter into the baking pan layered with the orange slices.
  • Bake in the preheated oven at 170C for 35 minutes or until a skewer or toothpick inserted comes out clean.
  • Set the cake aside to cool then turn before serving.
