It is satisfying! Indulging in a colourful bowl of refreshing berry fruit salad. In hindsight, a deliberate double win, tick to your nutritional calendar, when you tailor a delicious bowl of fruit salad and enhance the flavours whilst doubling the nutritional value! Like this berry fruit salad, plenty of vitamins from the berries. Protein from the chia-infused dressing, nuts and creamy whipped Greek yoghurt. Healthy oils from walnuts and chia seeds. And, besides the supplement benefits, this berry fruit salad with whipped yoghurt is a perfect treat to satisfy a sweet tooth but still keep it healthy. It is healthy, creamy, zesty, refreshing and delicious all in one.

The prep time is considerably less ( approximately ten minutes) but this excludes the soaking and washing of the berries to rid off pesticides or bugs and toasting the walnuts to enhance flavour, which is an additional 15 minutes.

I recommend Soaking the berries in water mixed with salt for a minimum of 20 minutes. Afterwards, rinse with clean water before using. The whipped yoghurt is an added, optional delicacy in this recipe but it also makes this salad unique. It is creamy, healthy, and ready in a few minutes. Serve it cold as a base then layer with salad on top. Alternatively, thoroughly mix it with the salad to make a fruit pudding.

Ingredients and substitutes

Fruit salad

  1. Arugula-roughly chopped. You can substitute it with parsley or mint.
  2. Blueberries
  3. Strawberries(sliced half)
  4. Raspberries
  5. Walnuts. Substitute with nuts of choice; Almonds, pecans, pistachios, macadamia. Roasted nuts have more flavour. To sweeten; roast with honey as in this recipe.

Fruit salad dressing

  1. Fresh lemon juice
  2. 1 teaspoon chia seeds
  3. Honey

Whipped Yoghurt

  1. Plain greek yoghurt
  2. Heavy whipping cream-cold
  3. Honey
  4. Vanilla extract for flavour ( optional)

Recipe run Through

Roast walnuts with honey. Mix honey with walnuts until evenly coated. Pour over a baking tray lined with baking paper. Bake for 15 -20 minutes, stirring occasionally. Afterwards, remove from oven and set aside to completely cool.

Soak and wash the fruits. Soak berries in water mixed with salt or vinegar and let them sit for a minimum of 20 minutes then rinse with clean water. This is optional but an added step to ensure that the fruits are completely clean and free of pesticides and bugs.

Make dressing. Mix honey, lime or lemon juice and chia seeds. Set aside.

Mix the salad. In a large bowl, add in blueberries, chopped strawberries, raspberries, washed and roughly chopped arugula, blueberries and walnuts. Pour in the fruit salad dressing and mix. Set aside.

Make whipped yoghurt. In a bowl, add cold heavy whipping cream, plain Greek yoghurt and honey. Using a hand mixer on medium speed whip until thick.

Serve whipped yoghurt with salad. Optionally, pour the whipped yoghurt over the fruit salad and mix to make a fruit pudding.

Ingredients

  • Berry salad
  • 1/2 cup blueberries

  • 1 cup strawberries

  • 1/2 cup raspberries

  • 1/4 roughly chopped arugula

  • 1/2 cup walnuts

  • Chia Salad Dressing
  • 2 tsp lemon juice

  • 1 tsp chia seeds

  • 2 tbsp honey

  • Whipped Yoghurt
  • 150 ml heavy whipping cream

  • 150 ml plain Greek yoghurt

  • 2 tsp honey

  • 1/2 tsp vanilla ( optional)

Directions

  • Start with Honey Roasted Walnuts. Preheat oven to 170C. Mix walnuts with honey, and spread on a baking tray line with parchment. Bake for 15-20 minutes stirring occasionally, remove and set them aside to completely cool.
  • Make dressing. Mix chia seeds, lemon juice, and honey until combined.
  • In a bowl, add washed and dried berries, cooled walnuts and roughly chopped arugula. Drizzle in the chia salad dressing and toss evenly to coat.
  • Make whipped yoghurt. In a medium-sized bowl mix heavy whipping cream, yoghurt, honey and vanilla. Whip on medium speed until thick. Serve with the fruit salad.
