These oatmeal cookies are crispy on the outside with soft chewy centres with a bonus, chocolate chips!

Making Oatmeal chocolate chip cookies can be fun because it is easy, and they bake quickly. No special equipment is needed and only few ingredients are required , the main being rolled oats .

From these oatmeal chocolate chip cookies, to banana oatmeal cream bars, and banana oatmeal muffins; Oats have limitless and exciting dessert possibilities .

Ingredients for the Best Oatmeal chocolate chip cookies.

Rolled Oats. Also known as Old fashioned Oats, rolled oats are softer and easy to combine with the other ingredients and, they bake quick.

Brown sugar. Brown sugar determines the ultimate texture of these oatmeal chocolate chip cookies, which is soft and chewy. It also adds more depth flavour-wise in cookies. Molasses present in brown sugar are hygroscopic, which in turn will ensure the cookies remain soft.

White sugar. A good ratio of white sugar and brown sugar will ensure crispy out and chewy centres due to the brown sugar.

Flour. All-purpose flour ensures that the cookies hold shape during baking. You can substitute all purpose flour with rice flour, almond flour, millet flour, oat flour though the texture and taste of the cookies will change.

Butter. Makes cookies tender and adds flavour. You can substitute butter with shortening or any nut butter although, the flavour will also equally change. Beware that cookies made with butter will spread more than those made with shortening since butter has a lower melting point compared to shortening.

Eggs. Eggs act as a binding agent, provide structure and add moisture to the cookies.

Chocolate chips. I used semi sweet chocolate chips.

Cinnamon. Cinnamon powder is the best to use since it is easier to combine with other ingredients.

Baking powder.

Baking soda. It enhances spreading while the cookies are baking while also neutralizing acidity in the brown sugar.

Vanilla extract.

Pinch of salt.

How to make chocolate chip oatmeal cookies step by step.

Step 1. Preheat the oven and line the baking trays with parchment paper then, set them aside.

In a medium bowl, mix the flour, baking soda, cinnamon, salt, rolled oats and chocolate chips.

Step 2. In a separate bowl, mix brown sugar, white sugar and butter. Using a hand mixer whip this mixture to a smooth consistency.

Step 3. Add in the vanilla and the eggs one at a time mixing at low speed until mixed in.

Step 4. Gradually, add in the flour mixture folding in with a hand spatula. Add more chocolate chips if necessary.

Step 5. Using a large ice cream scoop , scoop and roll the cookie batter placing on a baking tray lined with parchment paper. Bake for 10-13 minutes, until the edges start to brown. Remove from oven and set aside to cool.

Notes for success.

Use good quality semi sweet chocolate chips. However, if you do not have access to chocolate chips, finely chop a chocolate bar of choice and incorporate it into the mixture.

For softer cookies, slightly underbake . Cookies continue to bake even after removing from the oven because of the retained heat acquired from the oven.

Ingredients

  • 280 gm rolled oats

  • 150 gm brown sugar

  • 40 gm white sugar

  • 150 gm butter

  • 2 eggs

  • 1 tsp vanilla

  • 170 grams flour

  • 1 tsp cinnamon

  • 1/8 tsp salt

  • 1/4 tsp baking soda

  • 150 grams of chocolate chips

Directions

  • Preheat the oven to 170 C and line the baking trays with parchment paper. Set them aside.
  • In a medium-sized bowl, mix flour with baking soda and baking powder, then, add in rolled oats, cinnamon, chocolate chips and salt. Mix and set them aside.
  • In a separate bowl, mix the sugars with butter at medium speed to a smooth consistency. Add vanilla and the eggs one at a time and mix at low speed.
  • Afterwards, gradually add in the flour mixture and mix until fully combined. Then, using a large icecream scoop, scoop and roll the batter placing on a baking tray lined with parchment paper. Bake for 10-13 minutes until slightly browned around the edges.
  • Remove from the oven and cool on a cooling rack to cool before serving.
