A blondie is not crunchy as a cookie, not soft and fluffy as a cake, and lacks chocolate therefore, it’s not a brownie. Blondies are entirely chewy, gooey and dense with notes of caramel due to brown sugar.
Note that overbaking blondies will make them crunchy and dry around the edges, which is sometimes not a bad thing, but if you are going for an entirely chewy blondie don’t overbake.
To fix overbaked blondies, don’t consume immediately; instead, cover and refrigerate overnight. The next day the blondies will be soft, chewy and even tastier!
Ingredients.
Brown sugar. Blondies are entirely chewy and dense hence the need for brown sugar. It also adds in the brown colour of cinnamon blondies while also enhancing a deep caramel flavour.
All-purpose flour.
Cinnamon powder. You can also use Cinnamon syrup.
Melted butter. Good substitutes would be shortening, coconut oil, olive oil or any nut oil.
Eggs. Eggs add moisture to cinnamon blondies, as well as help add more liquid into the batter hence, acting as a binding agent. However, too many eggs will make blondies have a cakey texture.
Honey.
Salt.
Baking powder.
Homemade salted caramel. (Optional) for garnishing.
Vanilla extract.
How to make Cinnamon Blondies Step by Step.
Step 1. Preheat the oven to 350 F ( 175 degrees C ), line the baking tray with parchment paper and set it aside.
Step 2. In a medium-sized bowl, mix the flour, baking powder and cinnamon powder and set aside.
Step 3. In a separate bowl, mix the sugar and melted butter with a hand whisk until combined. Add the eggs one at a time mixing at every turn. Add the vanilla and honey and mix until everything is well combined.
Step 4. Fold in the dry ingredients into the wet ingredients and pour the batter into a baking tray. Bake in a preheated oven at 175 degrees C for 15 minutes.
Step 5. Garnish with homemade salted caramel and serve.

170 grams brown sugar
150 grams melted butter
2 large eggs
3 tablespoons honey
1 tablespoon baking powder
1 1/2 tablespoon cinnamon powder
1 tbs vanilla extract
5 grams salt
100 gms Salted caramel sauce ( Optional, for the drizzle )
Directions
- Preheat the oven to 350( 175 degrees Celcius), line the baking tray with greaseproof paper/ parchment paper and set it aside.
- In a medium-sized bowl mix the flour, baking powder, salt, cinnamon powder and set aside.
- In a separate bowl, mix the sugar with melted oil to a smooth consistency. Add in the eggs, vanilla, honey and mix with a hand whisk until everything is well combined.
- Fold in the flour mixture with the egg mixture with a spatula. Do not overmix. Bake for 10-15 minutes.
- Remove from oven, let cool, cut into small squares and drizzle salted caramel sauce.
Notes
- For chewy blondies use brown sugar.
- Baked Cinnamon blondies will taste better the next day.
