AVOCADO MUSHROOM BAGUETTE TOAST

I have been in a…. ”misunderstanding”, yeah that is the word. It happened when I was assembling my toast and the avocado sauce was all gone! I got pissed. This was not the first time and my guess probably not the last. In retrospect, the last place you would want to be is in a spitfire because of food; but It happens, sometimes. Though unfortunate, I gain my consolation from history and how empires fought in the same regard. It is true, ”food makes the world go round” or should I say ”avocados make the world go round”? It is understandable though, we are addicted to Avocados, in whatever form; sauce, sliced, pesto, guac the list is endless. By ” We” I mean me and you; because I’m guessing that’s why you are here. No? Is it the mushrooms?

It does not help that Avocado pairs perfectly with almost everything, especially with toast. And if I am being truthful the best toast combination is avocado and sauteed mushrooms. Should I say this is my favourite? well, I say that with every toast but Avocado Mushroom Baguette toast is my favourite!

The total prep and assembly would cost you only 10-15 minutes of your time. But that is also subject to the number of servings. Start with making the avocado sauce, followed by the sauteed mushrooms then toast the bread, in that order but that is also subject to convenience since the assembly will still be the same. A toasted crunchy baguette, layered with avocado sauce which is topped with sauteed mushrooms in combination with caramelized onions.

Avocado Sauce

To make the sauce you will need;

  1. Ripe avocados
  2. Coriander
  3. Garlic
  4. Olive oil
  5. Juice of lemon
  6. Salt and black pepper to taste.

Put all these ingredients in a food processor and blend until smooth and creamy. ( the exact measurements for this recipe are in the recipe box at the bottom of this page)

Sauteed Mushrooms

To make sauteed mushrooms start with caramelizing white onions. Add oil into a pan over medium heat then add finely chopped onion, fry until brown then set them aside.

Add mushrooms to a dry pan and let cook for 2-3 minutes, the mushrooms will release water.

After the water has completely evaporated add olive oil oil, a pinch of salt and black pepper to taste. Fry for a minute then add the caramelized onions and chopped cilantro give it a stir to mix then and immediately remove from heat.

Toast the Baguette

Slice the baguette in half then cut each half into smaller sizes. Drizzle with olive oil then toast in a pan until browned.

You can also toast the baguette in an oven preheated at 130c for about 7 minutes or just until browned and crispy on the top.

Assembly

Slather avocado toast on each toasted baguette then top with the sauteed mushrooms. Serve and enjoy!

Ingredients

  • Avocado Sauce
  • 1 large avocado

  • 4 cloves garlic

  • 4 tbsp olive oil

  • 1/2 cilantro

  • juice of two lemons

  • 1/2 cup water

  • Salt and pepper

  • Sauteed Mushrooms
  • 250 gm mushrooms

  • 2 white onions

  • Handful of cilantro

  • salt and pepper

  • olive oil

  • 1 medium-sized baguette

Directions

  • Avocado sauce. In a food processor, put avocados, cilantro, olive oil, lemon juice, garlic salt and pepper. Process until smooth and creamy.
  • Make sauteed mushrooms. In a pan, add oil and finely chopped onions and cook until browned. Remove from pan and set them aside.
  • Chop the mushrooms and add them to a dry pan set over medium heat. Cook for 3 minutes the mushrooms will release water.
    After the water has completely evaporated add oil, salt and pepper and fry for a minute or two.
    Add back the caramelized onions, and chopped coriander, stir then immediately remove from heat.
  • Toast the baguette. Drizzle sliced baguettes with olive oil and place them in a pan set over medium heat, cook until browned and crispy.
  • Assembly. Spread avocado sauce on toasted bread then top with 3 tablespoons of sauteed mushrooms. Serve and enjoy.
