How to make Orange Chocolate Cupcakes Step by Step.
Step 1. Make the frosting. In a medium bowl, mix finely chopped dark chocolate with heavy cream. Melt the mixture in a microwave or using the double boiler method.
Afterwards, pour in cold heavy cream into the melted chocolate mixture, mix thoroughly until everything is well combined. Let it cool, and cover with plastic wrap. Refrigerate for at least 1 hour.
Step 2. Make the cupcakes. Preheat oven to 170 degrees Celsius, line the cupcake pan with cupcake paper cups, and then set them aside. Mix and sift the flour, baking powder and baking soda, and set this mixture aside.
Step 3. Take two fresh oranges and cut them into small pieces. Mix the cut oranges with 2 tablespoons of water and blend into a puree using a food processor. Afterwards, add in the eggs, sugar, salt, oil and process until everything is well mixed.
Step 4. Then, transfer the mixture into a medium-sized bowl and mix with the flour mixture using a hand whisk or a spatula folding gently to combine. Do not overmix.
Step 5. Afterwards, fill the cupcake paper cups with the cupcake batter and bake for 17-20 minutes at 170 degrees Celsius, until a skewer inserted into the cupcakes comes out clean. Remove from the oven, and set them aside to cool.
Step 6. While the cupcakes are cooling, remove the chocolate ganache from the fridge, and using a hand mixer, whip until light and fluffy, then pipe on the cupcakes.
Tips for making these Orange Chocolate cupcakes.
- You do not necessarily need orange flavouring, as this will make the cupcakes taste fairly candy-like. Simply blend fresh oranges, including the peels to a thick orange puree and incorporate into the cupcake batter.
- Do not open the oven before the cupcakes are baked, otherwise, they will sink. Start checking from the 12th-minute mark.
