Breakfast is getting more and more interesting by the day; constantly evolving, and constantly changing. The most -trending servings, as they should are different-flavoured pancakes. From easy blender oatmeal pancakes to fluffy souffle pancakes. Most times, I like incorporating berries like in my blueberry pancakes or chocolate like in my cream cheese pancakes and chocolate chips pancakes. But whenever I’m feeling a bit extra, mini pancakes are always a go. They are tiny protein-loaded cereals-ish that you can have the fun of serving with plenty of garnish, and sauce; in a bowl; or a large tray like these oatmeal mini chocolate pancakes with cream cheese.

These pancakes are gluten-free and packed with plenty of protein to kick-start your day. They are equally fudgy due to the addition of bananas, honey, chocolate and chocolate chips which cooks them moist.
The cream cheese sauce is a mix of cream cheese, heavy whipping cream, honey and vanilla for extra flavouring.
How to cook oatmeal mini chocolate pancakes with cream cheese. For quick controlled results you can cook mini pancakes in a large mini pancake pan or optionally in a standard large pan. Either way, I like to fill my pancake batter into a plastic bag and pipe it into my mini pancake pan. It’s less messy and you can easily control the size and shape especially when you cook with a pan.
Easily transform into large pancakes. If mini pancakes are a bit of a hustle for you, then you can easily cook the normal classic way to the size you prefer.
More Pancake Topping Ideas
- Healthy chocolate syrup. A combination of melted dark chocolate with coconut milk
- Fruit compote. Cook berries of choice to a jam-like consistency and mildly sweeten the compote with honey or maple like in my blueberry and spinach pancakes.
- Chocolate ganache. Mix melted dark chocolate with heavy cream or milk.
- A mix of berries and bananas
- A mix of yoghurt, shredded coconut, and berries
OATMEAL CHOCOLATE PANCAKES WITH CREAM CHEESE

130 gm rolled oats
3 eggs
3 small ripe bananas
30 ml honey
2 tbsp oil
2 tsp baking powder
120 ml milk
3 tbsp cocoa powder
2 tsp vanilla extract
70 gm chocolate chips
pinch of salt
- Cream Cheese Sauce
100 ml heavy whipping cream
150 gm cream cheese
3-4 tbsp honey
Directions
- Add everything in a blender except the chocolate chips and blend to a smoothie-like consistency.
- Lightly grease the mini pancake pan set over medium heat.
- Pour equal amounts of pancake batter throughout the pan, then immediately on each pancake sprinkle chocolate chips before flipping onto the other side to cook. ( you can also stir in the chocolate chips in the pancake batter if you prefer)
- Cream Cheese Topping
- In a medium-sized mixing bowl, add heavy cream, room-temperature cream cheese, vanilla extract and honey. Using a hand mixer, mix on medium speed until slightly thick. Serve the pancakes with a mix of berries, bananas, shredded coconut or any topping you prefer.
