Sweetened Condensed milk is milk that has been added sugar and then heated for up to about 40 minutes, therefore, removing most of the water and making it thick and sticky.
It is a milky syrup, that is very useful in making quick desserts at such as homemade ice cream, truffles, cake filling, and no-bake desserts bars.
INGREDIENTS.
- Milk. Whole or raw milk is best since no constituent has been stripped. Whole milk is slightly thick and creamy and retains most of its fat content (about 3.5 percent). Regular or low-fat milk works fine but you will need to double the quantity since most of it will be lost in evaporation.
- Sugar– I use white sugar as a sweetener for my condensed milk. Coconut sugar, maple syrup, or honey are also good alternatives. However, it should be noted that the kind of sweetener used can change the final taste or flavour of the condensed milk.
- Salt.
STEP-BY-STEP INSTRUCTIONS.
- Step one; Combine your milk with sugar and salt, and stir until the sugar dissolves.
- Step two; Pour it into a pot over medium heat and let it simmer/ slow gentle boil.
- Step three; After roughly 40-45 minutes the milk will be reduced to more than half of the original and thickened.
- Step four; Remove from heat and let it cool to room temperature. It will thicken more as it cools.

FREQUENTLY ASKED QUESTIONS.
Why is my condensed milk turning brown?
It is okay if the colour changes to brown. This is due to the added sugar that caramelizes when heating; changing the colour of the milk to brown.
Why is my condensed milk not thick enough?
Condensed milk thickens as it cools. If it does not thicken as it cools this means you removed it too early from the heat. Pouring it into a pot and cooking it more will do the trick.
How Long Does it last?
Refrigerated condensed milk can last for up to 10 days in an airtight container.
