GLUTEN-FREE OATMEAL CHOCOLATE CHIP BANANA BREAD

There are countless banana bread recipes out there, some easy, some somewhat complex with the addition of delectable frostings and additions. Healthy, big, small, blended or not; most of us have made banana bread one or two many times for easy dessert indulgence. The truth of the matter is it’s the perfect dessert that easily conforms to any situation; breakfast, snack, or dessert; any day any time. A healthy gluten-free oatmeal chocolate chip banana bread made easy and equally delectable is a win-win.

Truth is, banana bread recipes are a go-to in most homes, it’s a flavour that conforms with most people. While complex recipes promise somewhat new flavour a simple recipe will always be my go-to; simple yet equally delectable!

Ingredients and Substitutions

Rolled oats. Rolled oats are best for baking; in addition, rolled oats are used to make oat flour therefore the best option to choose since this recipe uses a combination of both rolled oats and oat flour.

Oat flour. Oat flour is readily available in most stores but you can easily make it homemade by blending Rolled oats in a blender into a powdery flour.

Ripe bananas. Black-dotted ripe bananas have more flavour hence best suited for baking.

Eggs. Add structure and moisture, especially to gluten-free baked goods.

Oil. Vegetable oil, avocado oil, melted coconut oil, melted butter or olive oil are good alternatives.

Honey. Not only is honey used as a sweetener for this recipe it also adds to the moisture. Maple syrup is a good substitute.

Baking powder and Baking soda. For leavening.

Cinnamon powder. For flavour.

How to Make Gluten-Free Oatmeal Chocolate Chip Banana Bread

In a blender; add bananas, honey, vanilla extract, eggs, and oil; blend until smooth. Pour this mixture into a mixing bowl, and, add in oat flour, baking powder and rolled oats; thoroughly mix. Stir in the chocolate chips then cover and let the mixture sit for about 30 minutes before baking.

The recipe is gluten-free; by using a combination of rolled oats and oat flour. While you could easily buy oat flour; buying rolled oats would be more economical since you can easily make oat flour from it.

To make Oat flour, blend rolled oats in a blender, over medium speed until completely grind to soft flour. Rolled oats are pretty soft therefore you do not necessarily need a high-powered blender to do this.

The batter will be thin. This is because oat flour (gluten-free flour) has a higher liquid absorbing power compared to regular flour. This can make baked goods dry or crumbly when baked with normal cake batter ratios. Therefore to counteract this, more liquid ingredients are used hence a thin cake batter leading to a moist cake.

Letting the batter sit for a few minutes before baking is important. Because of the fine structure of oat flour, when liquid is introduced you might observe very small flour lumps and baking immediately can lead to small unbaked flour chunks. Letting the batter sit makes the flour soften and completely absorb all the liquid.

It will take longer to completely bake compared to a standard loaf cake.

Ingredients

  • 3 eggs

  • 3 bananas

  • 100 ml vegetable oil

  • 220 gm oat flour

  • 50 gm rolled oats

  • 100 ml honey

  • 2 tsp cinnamon powder

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 100 gm chocolate chips

Directions

  • Prepare the loaf pan. Grease with butter or cooking spray or line with parchment paper. Set it aside.
  • In a blender, add ripe bananas, oil, eggs, and honey. Blend on medium speed until smooth.
  • Pour the banana mixture into a large mixing bowl. Add in oat flour, cinnamon powder, baking soda and powder, and rolled oats. Mix thoroughly.
  • Stir in chocolate chips then cover and let the mixture sit for at least 30 minutes.
  • Pour the batter into a prepared loaf pan and bake in a preheated oven at 170C for 1 hr 10 minutes or until a skewer inserted comes out relatively clean.
  • Cool for 10 minutes then remove from the loaf pan. Set it aside to completely cool before serving.
