Fluffy with a chocolate chip touch in every bite, these pancakes are one of the best and easy breakfast delicacies to indulge in. With a few ingredients you have in your pantry, fluffy chocolate chip pancakes come to completion with a few steps; with vanilla for flavouring, and chocolate chips for that chocolate satisfaction.

I must admit that more often than not, while scrolling over the endless Instagram explore page, fluffy pancakes always catch my eye. Silently or loudly drooling with every picture and video; Im always on the hunt for different flavours.
TIPS FOR FLUFFY CHOCOLATE CHIP PANCAKES
LEAVENINGS. Like cakes, pancakes also need a leavening agent to help them rise. I’m talking about baking soda or baking powder. Mix the leavening of choice with the flour before introducing it to the pancake mixture. In this recipe I used baking powder but if you decide to use baking soda you might need an acid like buttermilk to activate it.
CHILL TIME. Letting the pancake batter sit for a few minutes gives time for the leavening to work while also enabling the flour or dry ingredients to maximumly absorb the liquids and expand; a trick also observed in muffins. This is why a pancake batter almost doubles in amount when it is chilled for a few minutes before cooking.
MIXING METHOD. The pancake batter is mixed in two steps; first, the wet ingredients are mixed until combined then folded with the flour baking powder mixture. When mixing the flour and wet ingredients do not overmix. Overmixing will overdevelop the gluten which will make pancakes chewy and dense.
Do not spread out the pancake batter too thin if you want tall pancakes.
PANCAKE TOPPINGS
A served pancake is okay, but garnish kicks it up a notch. Here are some of my favourite pancake toppings and garnish you can choose from.
- Maple and Honey.
- Cream Cheese whipped cream
- Chocolate Ganache
- Homemade berry sauce or fresh berries
- Shredded coconut, and toasted nuts.
- Plain whipped cream

FLUFFY CHOCOLATE CHIP PANCAKES

100 gm granulated sugar
250 gm all-purpose flour
350 ml milk
60 gm melted butter
3 eggs
200 gm chocolate chips
1 tsp vanilla extract
2 1/2 tsp baking powder
Directions
- In a small pan, mix milk with butter and place over medium heat. Heat until the butter fully melts then remove and set aside to cool slightly.
- In a medium-sized mixing bowl, whip the eggs, vanilla extract and sugar until the sugar is less gritty. Add the warm milk mixture and mix.
- Immediately, sift flour and baking powder over the wet ingredients then using a spatula fold to combine. Add the chocolate chips and stir to distribute throughout the batter. Be careful not to overmix the pancake batter at this point. Set the batter aside for at least 20 minutes before cooking.
- Place a lightly greased nonstick pancake pan over medium heat. Scoop one cup of pancake batter, pour and slightly spread it to the desired size. Do not spread the pancake batter too thin if you want tall thick pancakes.
- Cook until you see bubbles on the top part of the uncooked side. Flip and continue cooking until fully cooked.
- Repeat with all the pancakes then serve with maple syrup or topping of choice.
Notes
- The amount of sugar in the pancake batter is reduced since the pancakes are cooked with chocolate chips and served with maple syrup.
- Do not overmix the pancake batter after adding the flour; switch to a spatula then lightly combine. It is okay if the batter remains lumpy.
- Let the pancake batter sit for at least 20 minutes before cooking.
