I don’t think there is a lousy pancake recipe out there, to be honest. It was my astonished nephew who thought it was weird that I was writing a pancake recipe which got me thinking. I get it, a blind mixing will get you a pancake alright. But as I sit down and contemplate, I prefer a measured, well-structured pancake recipe which often yields specific delicious pancakes. These fluffy blueberry pancakes served with blueberry sauce, are fluffy and soft with a tangy-sweet but healthy berry sauce; blind mixing won’t give you the same results.

There are countless blueberry flavours to explore. Like buttermilk blueberry pancakes, coconut blueberry pancakes, and Ricotta blueberry pancakes served with different flavoured sauces. However, with easy steps and ingredients, yielding equally delicious pancakes these are my go-to blueberry pancakes.

Few Tips That Will Get You Fluffy Blueberry Pancakes

Do not skip the leavening. Similar to cakes these pancakes are cooked with baking powder which makes them fluffy and light.

Avoid overmixing the pancake batter. Overmixing a pancake batter can lead to chewy tough pancakes, a trick to make them softer is just combining the flour with the wet ingredients and then leaving it lumpy; you do not necessarily need a smooth pancake batter (unless you are making crepes).

Let the pancake batter sit for a few minutes before cooking. When pancake batter sits for a few minutes it doubles in volume which later translates to fluffy pancakes. This is because of the combined power of the leavening and more liquid absorption from the flour.

The Blueberry Sauce.

An additional serving to these blueberry pancakes is the homemade blueberry sauce which enhances the blueberry flavour. Made with only two ingredients this homemade blueberry sauce is a delight and, the fun part is you can tailor the flavouring to what you need.

It is made by cooking fresh blueberries, and a bit of sweetener (regular granulated sugar, honey, maple or apple sauce ) to a jam-like consistency. And to enhance the blueberry flavour, a pinch of lemon zest and juice kicks it up a notch, but you could also add cinnamon, orange juice, or maybe a combination of both. To make it nutritious, stir in a tablespoon of chia seeds or sesame seeds.

FLUFFY BLUEBERRY PANCAKES WITH BLUEBERRY SAUCE

Ingredients

  • 3 eggs

  • 70 gm granulated sugar

  • 250 gm all-purpose flour

  • 350 ml milk

  • 50 gm unsalted butter

  • 2 tsp baking powder
    150 gm fresh blueberries

  • 2 pinch of salt

  • Blueberry Sauce
  • 150 gm fresh blueberries

  • 3-4 tbs water

  • 2 tsp granulated sugar

  • 3-4 tsp fresh lemon juice

  • 2 pinch lemon zest

Directions

  • In a small pan, mix milk with butter and place over medium heat. Heat until the butter melts completely, then remove and set aside to cool slightly.
  • In a mixing bowl, with a hand mixer, whip the eggs and sugar until fully mixed and the sugar granules completely dissolve.
  • Immediately add sifted flour, baking powder and warm milk to the egg mixture. Make very few folds with a spatula just to combine leaving the batter lumpy. Add fresh blueberries and minimally stir to distribute through the batter.
  • Cover and let the pancake batter rest for at least 20 minutes.
  • Lightly grease a nonstick pan set over medium heat. Scoop a cup of pancake batter and pour on the pan, spread to the desired size. (Avoid spreading too much if you want tall pancakes)
  • Cook until bubbles appear on the top part 3-5 minutes then flip and cook the underside for 2 minutes. Repeat until you are done with all the pancakes.
  • To make the Blueberry sauce; in a small pan mix water, blueberries, lemon, lemon zest and sugar and cook until thick.
    Serve with the pancakes.
