DARK CHOCOLATE CHIA YOGHURT BARK

Most times, I want to make recipes that my sister can try out. Easy, fast, healthy and also delicious. Recipes that are best suited for people with busy schedules trying to keep up a healthy diet; but more often than not, crave something sweet or cold. As I imagine, for most people indulging in sweet treats while also maintaining a healthy standard is a win-win. Similar to this dark chocolate chia yoghurt bark which promises an intake of protein, minerals and vitamins; with a satisfactory melt-in-your-mouth delightfulness with every bite.

I imagine, since the invention of dark chocolate, there have been endless commendations for its antioxidant, and anti-depressant abilities. But you know this; because it is what you tell yourself when you sneak a bar of dark chocolate into your shopping cart more often than not. Imagine this, according to SFGATE, consuming dark chocolate and yoghurt together guarantees an increased intake of fibre and protein compared to indulging in Yoghurt or dark chocolate independently. However, though I try; nutrition is not my forte. All I want to do is share delicious and helpful homemade recipes.

Ingredients and substitutions

  1. Dark chocolate. Dark chocolate is the healthier option in the chocolate department. However, you can substitute it with preferred chocolate; maybe milk or caramelized white chocolate.
  2. Greek yoghurt. Or regular yoghurt.
  3. A mix of strawberries and blueberries. The good thing with barks is you can add as many toppings as you want; nuts, granola, and dried fruits; to name a few.
  4. Honey. Or maple syrup for the vegan interpretation.
  5. Chia seeds. Packed with minerals.
  6. Coconut oil. Just a little for mixing with the dark chocolate. You can substitute it with olive oil or vegetable oil.

How to make Dark Chocolate Chia Yoghurt Bark

Step one; Prepare a baking tray by lining it with parchment paper and set it aside. In a medium-sized bowl, mix honey, yoghurt and chia with a spatula until combined then, set it aside.

Step two; In a separate bowl, add chopped dark chocolate then, place the bowl over a pot of simmering water. Stir repeatedly until the chocolate melts.

You can also melt chocolate in a microwave using a heat-safe bowl at 20-second intervals, stirring in every turn. When the chocolate completely melts stir in coconut oil until combined.

Step three; Spread the hot chocolate over the prepared baking tray to a thin layer. Immediately, scoop the yoghurt mixture over the chocolate and spread carefully not to disturb the chocolate underneath. Top with blueberries and chopped strawberries.

Step four; Freeze for at least 3 hours or until firm. Afterwards, remove it from the fridge and break it into smaller pieces.

Recipe tips.

The yoghurt mixture should be at room temperature. If the yoghurt is too cold when pouring it over the chocolate, the chocolate can seize up and harden; which will make the chocolate layer separate from the yoghurt layer when frozen.

You can swirl the two layers. If you desire, using a spoon, simply swirl in the mixture such that the chocolate layer completely combines with the yoghurt layer.

Work fast. Spread chocolate solidifies fast so you will need to scoop the yoghurt mixture over it quickly before it solidifies.

Made from two layers of dark chocolate and chia-infused yoghurt, this is an easy recipe to satisfy a sweet and cold dessert craving. Dark Chocolate Chia Yoghurt Bark guarantees increased intake of protein, fibre and vitamins.

Ingredients

  • 200 gm dark chocolate

  • 360 ml yoghurt

  • 1 tbsp chia seeds

  • 3 tbsp honey

  • 2 tbsp coconut oil

  • 250 gm mix of strawberries and blueberries

Directions

  • Line a baking tray with parchment paper and set it aside. Mix room temperature yoghurt, honey, and chia seeds until combined in a medium-sized bowl. Set aside.
  • Finely chop a bar of dark chocolate and add it to a glass bowl. Place the bowl over a pot of simmering water until fully melted. (Make sure the bowl does not touch the water; the chocolate should melt from hot steam) .

    You can also melt the chocolate by microwaving it in a heat-safe bowl at 20 seconds intervals, stirring in every turn until fully melted.
  • Stir in coconut oil then pour and spread the dark chocolate on the prepared baking tray. Immediately, scoop the yoghurt mixture over the chocolate mixture and spread the same length and width as the chocolate.
  • Randomly top with chopped strawberries and blueberries over the yoghurt. Freeze for 3 hours until the yoghurt part completely solidifies.
  • When ready, break the bark into smaller pieces before indulging.

    Store leftovers in a tray or in a bowl in the freezer covered with cling film.
