Coffee Tres Leches Cake.

A delicious sponge cake soaked with caffeine-infused milk and topped with whipped coffee cream that will unceasingly be outstanding. This coffee tres leches cake will melt in your mouth with every bite, with a pleasing and exceptional creaminess, a slice is just not enough.

At first, the thought of completely soaking a cake with milk was appalling. I love my sponge cake alright, but completely immersing it in milk was another thing.

After doing some research, I noticed the constant appraising this cake got so I decided to give it a try, and oh my! I was astonished. The way the cake just blends and melts in your mouth is just so ecstatic. To this day I beat myself up for not trying tres leches sooner. This is why I have it in almost every flavour I could implore, from coffee to chocolate.

Whenever I have friends over, I always make tres leches cake. I have no complaints so far, just constant questions and requests for the recipe. So here we are.

So, what is a Tres Leches Cake?

Tres leches cake is a Mexican dessert whereby a sponge cake is soaked with milk syrup and topped with whipped cream. A Milk Sponge cake. The cake should be a dry sponge to enable maximum absorption of the milk syrup.

Tres leches milk syrup is made from a combination of different kinds of milk; sweetened condensed milk as a sweetener evaporated milk for more creaminess and fresh milk. The milk syrup can be flavoured per the targeted flavour.

How to make Coffee Tres Leches cake.

  • Start by making the coffee milk syrup. Mix instant coffee with fresh milk until the coffee fully dissolves into the milk. Afterwards mix with condensed milk and evaporated milk then set aside.
  • For the sponge, preheat the oven and line the baking tray with baking sheet then set aside.
  • In a medium sized bowl, mix eggwhites with sugar and whip to make a meringue.
  • In another bowl mix the egg yolks, milk, vanilla paste and salt. Afterwards add sifted flour to the egg yolk mixture and mix to combine. Fold the flour mixture with the meringue, carefully and pour in a baking tin.
  • Bake in a preheated oven until fully cooked. Remove from the oven and set it aside to cool.
  • Poke scattered holes using a fork and soak the sponge with the coffee milk syrup. Let it rest for at least one hour to fully absorb. Afterwards, top with whipped coffee cream.

How to make Coffee Whipped Cream.

Take one cup of fresh heavy cream and add in confectioners sugar and instant coffee powder. Whip on medium speed until light and fluffy, then frost the soaked sponge and serve.

How to Store Tres leches cake.

Cover with plastic wrap and keep it refrigerated. Coffee Tres leches cake does not last long because of the fresh milk that is used to soak the cake. It stays fresh for up to 3 days.

Notes for a Succesfull Coffee Tres Leches Cake.

Don’t add oil or butter to your sponge cake. This cake gets its moistness from the milk syrup. Adding oil or butter to the cake batter and then later immersing it in milk will make it soggy. This is why a dry sponge cake is preferred.

Let the cake sit for one hour after soaking with the milk Syrup. This is so that the cake completely absorbs the milk syrup.

Make the Coffee milk Syrup before baking to ensure the coffee completely infuses with the milk.

Make a stiff stable Meringue. When making the meringue during baking, add in 3 tablespoons of lemon juice or cream of tartar to make it stiff. The biscuit sponge cake depends heavily on the meringue to fluff up.

Be careful not to overmix when folding in the meringue otherwise, the cake batter will lose too much air.

Ingredients

For the cake

  • 4 egg yolks
  • 6 egg whites
  • 120 g sugar
  • 150 g milk
  • 160 g all-purpose flour
  • 2 tsp Vanilla
  • 1/4 tsp salt
  • 4 tsp lemon juice
Coffee milk Syrup
  • 200 ml fresh Milk
  • 200 ml evaporated milk
  • 150 ml Condensed milk
  • 2 tsp instant coffee powder.
Coffee whipped cream.
  • 300 ml heavy cream
  • 1 tsp instant coffee
  • 3-4 tbs confectioners sugar

Instructions.

  1. Start by making coffee milk syrup.Mix instant coffee powder with fresh milk until it is fullly dissolved. Add in condensed milk, and evaporated milk, mix and set aside.
  2. For the Sponge cake, preheat oven to 170C. Line the baking tray with parchment paper and set it aside.
  3. In a mixing bowl, whip egg whites with cream of tartar, adding sugar gradually until stiff peaks form.
  4. Afterwards, in a separate bowl, mix egg yolks, milk, vanilla, and salt .
  5. Pour in the sifted flour into the egg yolk mixture and mix until everything is combined. Fold in the egg white mixture with the flour mixture carefully not to lose the air that was whipped in.Pour into a baking tray and bake at 170C For 20-25 minutes.
  6. When completely baked remove the cake from oven afterwards, take a fork and poke random holes on the baked cake. Pour the milk syrup on the cake and put it in the fridge for atleast one hour.
  7. Make the coffee whipped cream. Mix heavy cream, powdered sugar and instant coffee. Stir this mixture with a spoon until the coffee completely dissolves. Whip on medium speed until light and fluffy. After the cake completely absorbs the coffee milk syrup, frost it with the coffee whipped cream and serve.
