Chocolate is nice; okay nice is an understatement for chocoholics like me. Fudge cakes are a delight; every chocolate lover’s dream, but a bit of flavour adjustment is always a convenient flexibility. Let’s say chocolate with mint, chocolate with strawberry and this time chocolate and orange! A specific flavour that is very particular to those who love pairing chocolate with a little bit of citrus. And if you love chocolate orange-flavoured candies then chocolate orange muffins will be your next favourite, easy-to-make dessert.
CHOCOLATE ORANGE MUFFINS; RECIPE OVERVIEW
In a blender, add all the wet ingredients; oranges, eggs, oil, sugar, and vanilla extract. Blend until thick and pasty.
In a separate bowl, mix sifted all-purpose flour, baking soda and baking powder. Pour the egg mixture into a bowl then combine with the flour. Do not overmix.
Cover with a cling film and let the mixture sit for a minimum of 30 minutes before baking. Line a jumbo muffin baking pan with muffin paper, then fill up to 3/4 of each with the muffin batter.
Afterwards, bake in a preheated oven at 200C for the first 10 minutes then reduce the temperature to 170C and bake for another 20 minutes or until a skewer comes out clean.
Note; the baking time for these muffins will be different if you are using a 12-cavity cupcake pan; which should bake with lesser time compared to when baked with a jumbo muffin pan as in the recipe.
Get More of the Orange Flavour
Orange juice alone will not make these orange chocolate muffins have a noticeable orange flavour. Adding more orange juice will also not increase the orange flavour, in fact too much will make the muffins dense and soggy with almost non-existent orange flavour.
An easy way of enhancing the orange flavour is by incorporating the zest; more zest more orange flavour and vice versa; which is why I usually blend the oranges including the peels in the wet ingredients mixture.
You can subsequently; in addition to the zest add a few tablespoons of orange liquor and optionally add orange-flavoured chopped chocolate for a more fudgy orange muffins.

1 large orange
2 eggs
120 ml oil
200ml buttermilk
250 gms all-purpose flour
50 gms alkalized cocoa powder
140 gms brown sugar
100 gms granulated sugar
2 tsp baking powder
1/4 tsp baking soda
2 tsp vanilla paste
Directions
- Cut 1 large orange into small pieces. Pour the cut pieces into a blender, add eggs, sugars, oil and vanilla extract. Process on medium speed until the oranges fully blend and the mixture is thick and smooth.
- In a bowl, mix all-purpose flour, cocoa powder, baking soda, baking powder and a pinch of salt.
- In a separate bowl add the egg mixture then gradually add the flour mixture and mix with a spatula to combine. Do not overmix, you can leave the mixture lumpy. Optionally stir in orange-flavoured chocolate chips. Cover the muffin batter with cling film or kitchen cloth and let the mixture sit for 30 minutes.
- Pour the mixture into a muffin pan lined with muffin paper filling up to 3/4 of the muffin batter.
- Bake n a preheated oven at 200C for the first 10 minutes then reduce oven temperature to 170C and bake for another 20 minutes or until a skewer comes out clean.
Serve warm or when fully cooled.
