CHOCOLATE BUNDT CAKE WITH CHEESE CREAM

Bundt pans indeed yield the most beautiful of cakes. Easy to prepare and much less complicated since the pans do most of the styling and shaping. The frosting is also not a must; if used, it is not very detailed like in layer cakes. A drizzle, glaze or rough spread dollops of frosting always do the trick.

If there is a dessert that is easy to prepare and astonishingly delicious is this chocolate bundt cake with cream cheese frosting. An easy chocolate cake, made fudgy and baked in under 30 minutes, then topped with a healthy dollop of whipped cheese cream.

What is a Bundt cake?

A Bundt cake is any cake; butter, sponge, shortbreads, mouse cakes, or pound cakes baked in a Bundt pan/ mould. With that said, no special recipe is required to make a Bundt cake; all you will need is your favourite shaped Bundt pan.

Bundt cakes are served in a variety of ways.

  1. With a drizzle of sweet, simple sauce like salted caramel.
  2. Spread with soft frosting like whipped cream cheese frosting
  3. You can bake Bundt cakes with streusel topping.
  4. Stuff with creamy filling like chocolate, caramel or cheese cream.

Make a fudgy chocolate Bundt cake!

The ingredients used when making chocolate cake determine its texture and taste. To make it fudgier, adopt alkalized cocoa powder and brown sugar and incorporate a chopped bar of semi-sweet chocolate into your batter.

Avoid overmixing the cake butter once the flour is added.

Incorporate melted chocolate or chocolate shavings in the cream cheese frosting.

How to make Whipped Cream Cheese Frosting.

To make the whipped cream frosting, you will need;

  1. Cream cheese
  2. Heavy cream
  3. Powdered sugar– Sift before use for easy incorporation.
  4. Vanilla extract -for flavour
  5. Pinch of salt- To balance out the sugar

Start by mixing powdered sugar, cream cheese, salt and vanilla extract with a hand mixer until thoroughly mixed.

Afterwards, add the heavy whipping cream and salt and continue mixing until the mixture thickens.

Notes.

  • Adequately butter, then lightly flour the bundt pan to stop the cake from sticking on the sides of the pan when unmoulding.
  • A Skewer inserted into the cake will and should not come off clean, especially if chocolate chunks are incorporated into the chocolate cake batter.

Ingredients

  • 250 gm cake flour

  • 200 gm brown sugar

  • 120 gm granulated sugar

  • 30 gm alkalized cocoa powder
    3 eggs

  • 180 ml vegetable oil

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 50 gm instant coffee

  • t tsp vanilla extract

  • 200 ml sour cream.

  • 250 gm Chopped chocolate

  • Whipped Cream Cheese Frosting
  • 250 ml heavy whipping cream

  • 300 gm Cream cheese

  • 200 gm powdered sugar

  • 1 tbs vanilla extract

  • 50 gm shredded chocolate for garnish ( optional )

Directions

  • Preheat the oven to 170C, then butter and flour a Bundt pan. Set it aside.
  • Mix flour, sugars, salt, instant coffee, baking soda, and baking powder in a medium-sized bowl, then set aside.
  • Mix eggs, oil, vanilla extract, and sour cream in a separate bowl until combined. Add in cocoa powder and stir to blend in. Afterwards, drizzle in hot coffee, swirling continuously.
  • Mix the wet ingredients with dry ingredients. Add chopped chocolate and lightly mix it into the batter to distribute. Pour into the prepared Bundt pan.
  • Bake for 30 minutes or until a skewer comes off somewhat clean. Set it aside to cool for 5-10 minutes, then overturn the bundt chocolate cake on a flat plate.

    Let it cool completely before frosting.
  • Whipped Cheese Cream Frosting
  • Mix cheese cream, powdered sugar, and vanilla extract in a medium sized bowl until combined. Add in heavy whipping cream and a pinch of salt. Whip until the mixture thickens, then spread on the cooled chocolate cake. Garnish with shredded chocolate.
