BLUEBERRY BANANA OATMEAL PORRIDGE

Blueberry banana oatmeal porridge is one bowl of fibre, protein, vitamins and much more; a hearty breakfast that is easy and fast. Oatmeal does not have to be boring and so does porridge. This porridge is flavourful with plenty of vanilla, sweetened with banana and topped with a very berry blueberry compote.

Flavouring Blueberry Banana Oatmeal porridge

Cooking the blueberries in the porridge is an option, but it limits the flavours both for the blueberries and the porridge. Cook each separately( oatmeal and blueberry ), and flavour the porridge with vanilla or cinnamon. Similarly, separately flavour the blueberry compote. Mostly, most compotes are enhanced with fresh acidic fruits like lemons or oranges. A recent trick I’ve learned is you can easily make a healthier version by adding a teaspoon of chia seeds for extra protein intake. The addition of chia seeds makes this blueberry banana oatmeal porridge extra nutritious.

The blueberry compote is made by cooking fresh or frozen blueberries with a sweetener of choice to a jam-like consistency. For this recipe, I made it with lots of fresh orange juice and zest which gives it a sweet tang while also enhancing the blueberry flavour. The good thing is you can store excess blueberry compote and use it in other breakfast recipes say toast or chia puddings.

Ingredients

  • OATMEAL BANANA PORRIDGE
  • 1/2 cup oatmeal

  • 1 cup almond milk

  • 1 cup water

  • 2 ripe mashed bananas

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1 tbsp chia seeds

  • Blueberry Compote
  • 100 gm fresh blueberries

  • 1 tbsp orange zest

  • 1/2 cup fresh orange juice

  • 2 tsp granulated sugar or honey

Directions

  • To make the oatmeal porridge, add everything to a small cooking pan. Boil over medium heat stirring frequently for up to 5 minutes. Pour the porridge into a bowl and make the blueberry compote.
  • To make the blueberry compote, mix blueberries, orange zest, orange juice, and sugar. Cook over medium heat until thick 3-5 minutes. Serve with the porridge with additional toppings like yoghurt and roasted nuts.
