How to store Red Velvet cookies.
Completely cool baked red velvet cookies before storing, otherwise, they will turn out sticky.
Afterwards, put the wrapped cookies in a container and tightly seal it. For long term storage, store cookies in the refrigerator for up to 8 days.

- Use good quality white chocolate chips.
- Cocoa powder tends to make cookies dry therefore, use in little amounts.
- Use room temperature butter.
- Remove cookies while still soft from the oven. It is perfectly normal if the oven timer goes off but the cookies stilll feel soft. Cookies will continue to bake even when they are removed from the oven. Waiting for cookies to completely bake in the oven may lead to burning.
- Do not under-beat the butter. Cream the butter and the sugars for atleast five minutes.
- Don’t forget the salt.

EASY RED VELVET COOKIES RECIPE.

300 grams flour
150 grams butter
1 egg
2 egg yolks
120 grams brown sugar
80 grams white sugar
2 teaspoon vanilla extract
20 grams cocoa powder.
1 teaspoon baking powder
1 teaspoon baking soda
200 grams white chocolate chips
Pinch of salt.
Directions
- In a medium-sized bowl, mix flour, baking powder, baking soda, cocoa powder, white chocolate chips and salt, then set aside.
- In a separate bowl, cream the butter and the sugars for at least 5 minutes until light and fluffy
- Afterwards, add in the egg and egg yolk and vanilla extract then mix to combine.
- Fold in the dry ingredients with the wet ingredients to combine. Using an ice cream scoop or a tablespoon, scoop the cookie mixture and roll it into small balls placing it on a baking tray lined with a baking sheet.
- Refrigerate for at least 30 minutes then bake in a preheated oven at 170 degrees Celcius for 12-15 minutes.
Notes
- If you don’t have access to good quality white chocolate chips ( should have a cocoa butter content of more than 30%) finely chop a white chocolate bar into bite-sized pieces.
- Cookies should have soft centres when removed from the oven.
- When mixing the wet ingredients with the dry ingredients, just mix to combine, do not overmix.
