How to make Homemade Caramel Candy.
- In a pan mix the heavy cream with glucose syrup and bring to a boil, then set aside.
- In a separate pan, over medium heat, add sugar and melt it completely until golden brown . When it completely caramelizes and turns golden brown, pour in the heavy cream mixture, stirring constantly with a spatula (Preferebly a silicon spatula) . Let it come to a gentle boil( upto 120C) .
- Afterward, remove from heat, and let it cool to 50C. Stir in butter and vanilla paste and pour into a baking tray lined with baking sheet/parchment paper.
- Let it sit overnight, then cut into small cubes. Similarly, let it set in the fridge for two hours, remove and thaw to room temperature, then cut into cubes.

- Granulated Sugar. Any kind of sugar works okay (with the exception of powdered sugar) .When sugar is heated it undergoes caramelization and turns into a dark brown caramel.
- Heavy Cream. Liquid used to deglaze the caramelized sugar.
- Butter. Improves texture and shine while also enhancing the caramel flavour.
- Glucose Syrup. Glucose syrup is used in most candy recipes because it does not crystallize.
- Vanilla Extract.
- Pinch of salt
Helpful Tips
- To avoid intense clamping up of the caramelized sugar, add in warm heavy cream and stir constantly.
- When caramelizing the sugar, add in half amount the sugar to the pan, and after it completely melts, add in the remaining half. Always caramelize on low-medium flame.
Homemade Caramel Candy Bites Recipe.
Ingredients.
- 350 grams granulated sugar
- 100 ml Heavy Cream
- 120 grams unsalted butter
- 30 grams glucose Syrup
- 1 tsp Vanilla extract
- 1/4 tsp salt
Procedure
- Line a baking tray with parchment paper and set aside.
- Mix the glucose syrup with the heavy cream in a medium pot and bring to a boil, then set aside.
- In a separare, wide pot, pour in half the sugar, melt over medium heat continuously swirling the pot. After the sugar completely melts, add the other half and let it caramelize to golden brown color. Always swirl the pot but avoid stirring.
- When the sugar is completely melted and cooked to a golden brown, pour the heavy cream mixture into the caramelized sugar and stir continuously and bring to 120C( use a candy thermometer). Remove from heat and set it aside.
- Stir in the butter and vanilla extract when it goes down to 60C-50C. Afterwards, pour in a baking tray lined with parchment paper.
- Let sit at room temperature overnight, then cut into small pieces.
