MANGO COCONUT POPSICLES

Whirr…as my blender goes round and round with my mango puree, I am struck with a deep nostalgic wave. Oh time; it creeps on you without notice. I am sure it is not only me, it is just something you are sure to experience when making popsicles; these mango coconut popsicles. And now that I have aged, I cannot help but envy the old younger me, when I could consume just about anything, guilt-free. Earlier on, most popsicles were a blend of water, colouring and lots of sugar; maybe a bit of flavouring, frozen cool aids or juice cola depending on where you are from. And I am pretty sure if I did water, sugar, and colour mix and pour into popsicle bags my nephew won’t mind; in fact, I think that is what he would prefer.

But that is what time does. it creeps, we develop taste and preference not to mention our ageing bodies that give us side eyes every time we consume…some things!. Sugar-coloured water just cannot do it any more; we want flavour, and sweetness but also make it healthy! which is what these mango coconut popsicles are.

It is easy

All you will need is mangoes and although they may not be available all year round you will find them in the frozen food section of every food mart. And if you have a chance at accessing fresh fruit mangoes, the more ripe they will be the better; since we are minimizing adding more sweetener in this recipe.

To make mango coconut popsicles; In a blender, add chopped mangoes, a can of coconut milk, a bit of honey or maple for sweetening, juice of lime or orange juice and blend until smooth. Pour into popsicle bags and freeze until solid.

Do a taste test before freezing!

The beauty of mango coconut popsicles is you can always test the mango puree before freezing; this way you can always adjust the sweetness or flavour level. For instance, if it’s still bitter you can add a few extra tablespoons of honey and, if it is too sweet try diluting it with water, orange juice or more coconut milk if you have extra.

Ingredients

  • 2 large mangoes

  • 1 can of coconut milk

  • Juice of two oranges

  • 3-4 tbs honey

Directions

  • Peel and chop mangoes into small pieces.
  • Into a blender add chopped mangoes, coconut milk, juice of two oranges and honey. Blend until smooth.
  • Pour the mango mixture into popsicle bags. Freeze until solid; the time will depend on the freezer setting.
